- 1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion
- 3⁄4 cup red bell pepper, diced
- 1⁄3 cup sun-dried tomato, chopped
- 8 ounces frozen salad shrimp, thawed and patted dry
- 2 hard-boiled eggs, peeled and chopped
- 3⁄4 cup mayonnaise
- 1⁄2 cup bleu cheese salad dressing
- 2 garlic cloves, minced
- 1⁄4 cup grated parmesan cheese
- 3 tablespoons cilantro, chopped (or to taste)
- 1 teaspoon lemon juice
- 1 teaspoon hot sauce (or to taste)
- 1⁄4 teaspoon sea salt (or to taste)
- 1⁄4 teaspoon fresh ground black pepper (or to taste)
- 2 tablespoons green olives, chopped, for garnish
directions
- Cook potatoes according to instructions on package.
- Let cool and place in a large bowl.
- Add peppers, tomatoes, shrimp, and eggs. Stir gently to mix.
- In a separate bowl, whisk together the mayonnaise, salad dressing, garlic, Parmesan, cilantro, lemon juice, hot sauce, salt and pepper.
- Pour over potato mixture and mix well.
- Cover and refrigerate at least 1 hour.
- Garnish with chopped olives before serving.
