- 2 tablespoons olive oil
- sea salt
- fresh ground black pepper
- 1.10 lb ground lamb
- 1 large onion, finely grated
- 1 large carrot, finely grated
- 2 garlic cloves
- 1 -2 tablespoon Worcestershire sauce
- 1 tablespoon tomato puree
- fresh thyme sprig, leaves picked
- 1 sprig fresh rosemary, needles chopped
- 1 1⁄16 cup red wine
- 1 1⁄3 cup chicken stock
- 1 kg potato, peeled and cut into chunks (Desiree)
- 0.11 lb butter
- 2 egg yolks
- parmesan cheese, for grating
- olive oil
- sea salt
- fresh ground black pepper
directions
- Preheat the oven to 180C/gas 4.
- Heat the oil in a large pan until hot. Season the mince and fry in the oil over moderate to high heat for 2-3 minutes.
- Stir the onions and carrot into the mince then grate the garlic in as well. Add the Worcestershire sauce, tomato puree and herbs and cook for 1-2 minutes, stirring constantly.
- Pour in the red wine and reduce until almost completely evaporated.
- Add the chicken stock, bring to the boil and simmer until the sauce has thickened.
- Meanwhile, cook the potatoes in boiling salted water until tender. Drain then return to the hot pan over low heat to dry out briefly.
- Pass them through a potato ricer then beat in the egg yolks, followed by about 2 tbsp grated Parmesan. Check for seasoning.
- Spoon the mince into the bottom of a large ovenproof dish.
- Using a large spoon, layer the mashed potato generously on top of the mince, starting from the outside and working your way into the middle.
- Grate some extra Parmesan over and season. Fluff up the mash potato with a fork to make rough peaks.
- Bake in the oven for approximately 20 minutes, until bubbling and golden brown.

Oh MY...fabulous recipe. I don't normally like shepherds pie but this one is full of flavor. I followed it exactly except to add some corn kernels to the meat mix and some cheddar to the potatoes. I was even hesitant about the egg yolks but i thought try it first..lmao i was wincing as i put the raw egg into the hot mashed potatoes and whipped them as fast as i could! But it did add to the texture.

Made this last night, and it was amazing! I've only ever had my mom's shepherd's pie before, which was much different than this. I loved the slight sweetness of the mince, and the potatoes were great! We subbed a little additional salt for the parmesan and didn't use butter since my daughter has a milk allergy. Still tasted great!

This is the best shepherds pie EVER!! I was making it for a sick friend, and I had to hold myself back from not sending it over!! This is definitely a cut above your usual shepherds pie, and the extra effort is well worth it. I didn't have any red wine on hand, so used white vermouth and red wine vinegar instead ( about 3/4 vermouth and 1/4 vinegar) and it was still amazing. My husband who has always hated shepherds pie, smelled it cooking and said that he wants to try it this week because it smelled and looked so good. Definitely a keeper!!

Such a good recipe, I loved what the red wine did for the flavor. I did change it a bit, due to what I had on hand. I subbed ground beef for lamb, though I would LOVE to try it with lamb. I wasn't sure what tomato puree is, so I used ketchup and I decided to go with beef broth instead of chicken broth. Also, I think next time I will chop the onion and carrot into a little bit bigger pieces; I like to be able to see my veggies in my shepherds pie....and also maybe add some corn. All in all, this was a definite keeper, and will be visited again and again! Thanks!

I made this dish last night. We are fans of Gordon Ramsey and I thought I would give it a try. I used ground beef instead of lamb and tomato paste. The dish was great. My one year old loved it! I was happy with the dish, full of flavor and not dry at all. My hubby enjoyed the meal. I will make this again! Don't be to stingy with the parm. It makes a great crunch when baked on top! Yum!
