  • Heat over to 350 deg.
  • Grease a 10 inch oven proof skillet or 2 Quart baking dish.
  • In a Medium Skillet Brown the sausage and onion,drain well.
  • In a large bowl combine,eggs,cornmeal mix,corn,milk, and oil.
  • Pour half of the corn meal mix, mixture into the greased pan,then sprinkle with the sausage mixture and cheese, Pour remaining batter over the top of mixture in skillet.
  • Bake 30-40 minutes and then let stand 10 minutes.

  1. This is a great hit with our family. We also add a jar of jalepenos (drained) to the batter to give it a little more spice, and top the cornbread with a little more cheese during last 5 minutes of baking.

I am retired.I do a lot of the cooking in our house since my wife is handicaped. I have not had any formal training. I really like to BBQ since we do have a smoker. I have smoked baby back and regular pork ribs, turkey and pork butt. I do not use cook books but use Recipezaar and Foodtv.com I really like cooking different kinds of meats on the grill or in the smoker. As far as a favorite restaurant, I really don't have one as we rarely go out for meals.
