Sausage and Lentil Soup

directions

  • Rinse lentils and pick through.
  • Heat oil in large pan; cook onion, celery and garlic, stirring, until onion is soft. Stir in stock, tomato puree, lentils,tomato and carrot.
  • Simmer for about 3/4 hour or until lentils and carrots are tender.
  • Meanwhile cook sausages, until brown all over and cooked through.
  • Drain sausages on absorbent paper, slice then add to soup.
  • Cook uncovered till hot. Add pepper to taste.

Made this yesterday it was a cold and snowy day here, the only changes I also used a large 28 oz can of diced tomatoes instead of the chopped fresh tomato and the puree, as that is what I had on hand. Also I put in a dash of lemon pepper and vinegar at the end of cooking time. Oh and I used Hot Italian Sausages too. Everything worked out great. Superb Lentil Soup !
     
  3. This was hearty and delicious! Mine turned out more like a stew, but we liked it that way. ;-) I used some spicy smoked sausage that I had sliced and browned for the beef sausages. This definetely a meal in itself that I served with some crusty bread. ;-) Thanks for posting!
     
  4. Great soup! I used way more garlic than stated, and used homemade turkey broth that I keep handy in my freezer in place of chicken broth. My DH will enjoy this for lunch, he loves beans and lentils! thanks Star!...Kitten:)
     
  5. I made a double quantity of this hearty and flavoursome soup, for Pick a Chef 2006, so I have several lots in the freezer to enjoy in the future. As well as all the listed ingredients (I used baby carrots and homemade chicken stock), I added four chopped zucchini, simply because they were looking so good when I bought the other vegetables. I used some gourmet chicken and camembert sausages and I added a teaspoon of dried thyme and a teaspoon of dried oregano. A great winter soup, Stardustannie! Thanks for sharing it!

  1.   2. Very good and filling --perfect for cold weather season! The changes I made was using a big can (26 oz) of chopped tomatoes instead of the puree and cut up tomatoes. I also used smoked sausage (16 oz), sliced. We really enjoyed this with rye bread. Thanks for sharing!
