This is a different kind of salad that is really pretty good.
- 1 (1 lb) can sauerkraut, drained
- 1 (4 ounce) jar pimientos, drained
- 1 cup sweet onion, chopped
- 1 green pepper, diced
- 1⁄2 cup sugar
- 1⁄2 cup vinegar
- Combine all ingredients.
- Refrigerate overnight.
It's funny that you posted this one, as I was thinking about posting it myself. My folks live at the lake and have large family gatherings every summer holiday. This is one of those make ahead salads that have become a requirement for those gatherings. Everyone should try this.
My Grandma used to put cubed boiled potatoes & diced onions in the sauerkraut & black olives & added just olive oil for the dressing. Delicious!
