  1. Heat oil in a large, heavy skillet.
  2. Quarter and slice zucchini and squash.
  3. Saute zucchini, squash, and onion in oil until tender.
  4. Add sausage (cut in half, and sliced) tomatoes, Rotel, tomato sauce, corn, and seasoning.
  5. Simmer for about 20 minutes, stirring occasionally.

Great way to use up your summer veggies! Colorful and delicious. I used Conecuh smoked sausage, which is a bit spicier than most, and I loved the added bit of heat. Thanks for sharing! Made for Spring PAC 2014.
