  • Brown hamburger, adding 1 cup chopped onion, and 1 cup chopped green pepper as the meat browns. Add 1 large can chili beans (without meat), 1 large can stewed tomatoes and season to taste with salt, pepper, garlic, cumin, and extra hot chili powder, if desired. Layer meat and bean mixture in casserole with 1 package of corn tortillas. Top with grated cheese. Bake in 350* oven for 20-30 minutes. Variations: Add canned or left over corn, chopped olives to make it a mock tamale pie.

  1. This is really great..Seldom I find a recipe I totally love but this one is it! The changes I made were..(1) For sure add corn (2)used a packet or 1/2 of taco seasoning mix. (did not use spices listed.) (3) and used half can of chili beans. This is worth a try. Glad I tried it.
