Rosemary Chicken

- 4 boneless skinless chicken breasts
- 29.58 ml chopped rosemary
- 236.59 ml lemon juice
- 591.47 ml white wine, separated
- 6-10 garlic cloves, chopped fine (roasted is best)
- 14.79 ml salt
- 9.85 ml fresh ground pepper
- 473.18 ml rosemary oil
- 236.59 ml cream or 236.59 ml half-and-half
- 236.59 ml sugar or 236.59 ml honey
directions
- In a blender combine rosemary, lemon juice, white wine, garlic, salt and pepper and turn on low.
- Drizzle in rosemary oil until emulsification forms.
- Pour over chicken in a zip-top bag and refrigerate for 2-3 hours.
- Pull out chicken breasts and brown each side in a deep skillet.
- pour in 1c white wine and simmer, covered for 20 min or until breasts are fully cooked.
- pull out chicken and cover.
- Pour marinade in pan, adding one cup cream and one cup sugar or honey and boil.
- continue to boil marinade until it reduces to about half forming a tasty sauce.
- Serve with Super Green Beans and brown rice.

<p>I used to cook professionally, but got out of the business because it is a soul crushing, low paying job. If you want to hate cooking, run a hotel kitchen. Now that I don't have to do it for a paycheck, I cook for my friends and family as much as possible. I enjoy making everything from BBQ to Bur Blanc. I love mixing chocolate with spicy ingredients. I work offshore in the Gulf and I always sneak down to the galley to make stuff for the guys. I'm a huge fan of Alton Brown. I think the guy is a genius. I have tried so many of his recipes, and they all rock. Since finding this website and having a public place to post my recipes for others to review, I have become more conscientious about writing my kitchen experiments down. I still have yet to get my whole wheat pizza dough to paper, but I promise, it's on it's way.
