- 1 lb fresh green beans, trimmed
- 2 tablespoons olive oil
- 1⁄2 teaspoon garlic powder
- 1 dash salt, to taste
- 1 dash pepper, to taste
- 3 tablespoons olive oil
- 2 teaspoons fresh lemon juice
- 1⁄4 teaspoon garlic powder
- 1 dash pepper, to taste
- 1 cup cherry tomatoes, quartered
- 3 tablespoons feta cheese, crumbled
directions
- Preheat oven to 400.
- Spread green beans on a large baking tray in an even layer.
- Drizzle olive oil over top and sprinkle with garlic powder, salt, and pepper. Lightly toss to coat.
- Bake for 12 to 15 minutes or until tender, but still slightly crisp.
- As green beans are roasting, prepare the dressing.
- In a small bowl, whisk together the olive oil, lemon juice, garlic powder, and pepper.
- Pour over green beans and top with cherry tomatoes and feta.
- Serve immediately or refrigerate until ready to serve.
