Roasted Garlic Green Bean Salad

I had fresh garden green beans, and this was a great way to eat them. I used fresh limes in place of lemons. Orange juice would also work. I also used blue cheese instead of feta because it's what I had. Recipe courtesy of www.pumpkinspice.com. Serving size is estimated.

  1. Preheat oven to 400.
  2. Spread green beans on a large baking tray in an even layer.
  3. Drizzle olive oil over top and sprinkle with garlic powder, salt, and pepper. Lightly toss to coat.
  4. Bake for 12 to 15 minutes or until tender, but still slightly crisp.
  5. As green beans are roasting, prepare the dressing.
  6. In a small bowl, whisk together the olive oil, lemon juice, garlic powder, and pepper.
  7. Pour over green beans and top with cherry tomatoes and feta.
  8. Serve immediately or refrigerate until ready to serve.
