Not your average butter cake! Custard powder added makes this rich enough to be decadent, but it is so easy to prepare. An old family favourite.
- 1 1⁄4 cups self raising flour
- 1 cup caster sugar
- 1⁄4 cup custard powder
- 1 cup milk
- 2 eggs
- 125 g very soft butter
- 1 teaspoon vanilla
- 1⁄4 teaspoon bicarbonate of soda
- Preheat your oven to 170 degrees Celcius.
- Grease and line a 20cmx20cm square cake tin.
- Place all the ingredients into a large bowl.
- Beat on high for 2-3 minutes until combined and the mixture is thick and a light creamy colour.
- Pour into prepared tin and bake for 1 hour.
Worked out well, tasted delicious ! Rose well and evenly and was a great colour. We put a vanilla icing on it. Made for ZWT8.
This recipe deserves 10 stars, it even survived my huge mistake and managed to taste good! My sister and a friend were here when I was preparing the cake, and after it was already in the oven I glanced over and saw the butter I was softening sitting on the counter! It never made it into the cake! The cake looked ok, so I baked it as it was, and after it came out of the oven I dusted it with powdered sugar. We were really curious to see how it was going to taste with no butter in it, and actually it was great! We all agreed that it was worthy of a scoop of ice cream, or some fruit on top, or even good just as it was. So, a cake that can be that good, even when I forget to add the butter deserves 10 stars! I will make it again next week for a family party, this time with the butter!!
Wow cookingpompom, was this good. We really enjoyed this rich, moist, tender cake. It was full of butter and canilla flavors. The cake has an excellent crumb. Loved the texture and the flavor, it sneaks up on you and bam...your hooked. I enjoyed my peice with simple icing sugar, while my dh split his like an ice cream sandwich, filled it with vanilla ice cream and topped it with fresh, sweetened strawberries. Either way, they were both good. Looking forward to having a peice tomorrow with a nice cup of tea. Thanks for sharing this treat, which I will make again and again.
