This is great! It was easy to make as I was already roasting red peppers for my salad. It is tasty and we did not miss the fat/ oil at all. Thanks for posting, will make again for sure.

This is a wonderful vinagrette! DH and I loved the light crisp flavor. We did not even miss the oil! I prepared the recipe, using 1/4 tsp of oregano (not a favorite flavor of mine), fresh rosemary from my herb garden, and roasted garlic from my freezer. I served it over a spinach salad for DH and I. It was a lovely light warm weather meal! I think this vinagrette has many possibilities, such as a marinade or just drizzle it over any grilled meat! Thanks Harry Harry #2!
