We were just mucking around in the kitchen trying to use up ingredients and this was the result. Delicious! It's not exactly an omelette, but I don't know the best word for it. It will make either 1 meal, although it is extremely rich, or 4 side servings.
- 2 eggs
- 1 red onion, diced
- 1⁄4 cup mushroom, diced
- 1⁄4 cup blue cheese, crumbled
- 1⁄4 cup shallots or 1⁄4 cup green onion, thinly sliced
- 1 tablespoon milk
- salt, to taste
- Mix all ingredients in a mixing bowl. (Note, for the salt, we have a twist top salt dispenser and used approx 20 twists of salt).
- Fry on low heat in a small pan, covered for approx 10 mins or until cooked through.
