Red Curry Sauce for Fish, Rice, or Veggies

  • Whisk all ingredients in a small saucepan until blended. Add more curry to taste; be careful, a lot goes a long way.
  • Heat over medium-low until bubbling. Reduce heat and simmer 5 minutes.
  • Pour over fish, rice, and vegetables.

  1. This sauce is easy to put together and the taste is fantastic! I made stir fried veg with plenty of rice to soak up this delicous sauce. Garnished with fresh basil and lime wedge. I will be making this again next week with chicken and veggies.
     
  2. Versitile, easy, and delicious! What more could anyone ask for? I used 3 tablespoons of the red curry paste and it was just right for us. Stir fried a bunch of veggies that I had on hand (onions, bell peppers, celery, water chestnuts and hearts of palm) , then added the sauce ingredients and stirred. Served with basmati rice and pan grilled tilapia.
     
  3. Are you kidding me? This is so good. It has only 3 ingredients, so couldn't be simpler. At first, you would swear you are eating dessert, the sauce is so creamy, smooth, delicious. Then it is followed by a subtle heat. I served it over baked fish. It does scream out for rice. Made for ZWT #6.
