Raisin Bread

ingredients
- 1 lb raisins
- 2 teaspoons baking soda
- 2 tablespoons unsalted butter
- 2 cups boiling water
- 2 cups sugar
- 2 eggs, well beaten
- 2 teaspoons vanilla extract
- 4 cups all-purpose flour
- 1⁄2 cup nutmeats (I use black walnuts)
- 2 teaspoons cinnamon
- 1 teaspoon salt
directions
- Mix together raisins, baking soda, butter and boiling water. Let stand 6-8 hours or over night.
- Mix together sugar, eggs, vanilla extract, and add to raisin mixture.
- Add flour, nut meats, cinnamon, salt and mix well.
- Grease and flour either 1 lb. coffee cans or loaf pans, fill 1/2 full and bake at 350* for 1 hour or until cake tester comes out clean.
- NOTE:* Can use splenda instead of real sugar, if desired.

First off you need to know that the actual WORKING prep time for this recipe is only about 5 to 8 minutes ~ The 8 hours comes in when you let the raisins plump overnight! That said, This recipe made for A VERY TASTY RAISIN BREAD (a favorite of mine)! I did cut the recipe in half, though, & it made 2 fair-sized 9" loaves! {Tagged, made & reviewed in the All New Zaar Cookbooks Tag]
