  • Mix together raisins, baking soda, butter and boiling water. Let stand 6-8 hours or over night.
  • Mix together sugar, eggs, vanilla extract, and add to raisin mixture.
  • Add flour, nut meats, cinnamon, salt and mix well.
  • Grease and flour either 1 lb. coffee cans or loaf pans, fill 1/2 full and bake at 350* for 1 hour or until cake tester comes out clean.
  • NOTE:* Can use splenda instead of real sugar, if desired.

  1. First off you need to know that the actual WORKING prep time for this recipe is only about 5 to 8 minutes ~ The 8 hours comes in when you let the raisins plump overnight! That said, This recipe made for A VERY TASTY RAISIN BREAD (a favorite of mine)! I did cut the recipe in half, though, & it made 2 fair-sized 9" loaves! {Tagged, made & reviewed in the All New Zaar Cookbooks Tag]

I also have diebetis and have to rework most of the recipes that I use so as to not through my blood sugars all out of wack. I was taught to cook by my mother and grandmother (God rest her soul)
