Queen of Carrot Cakes ( Wheat and Milk Free)

"This cake is so easy to do that even the queen herself could do it. The secret is using the finest grater possible. This recipe is for making a small 20cm cake."

  • Pre heat oven to 180 degees Celsius Grease a 20 cm springform cake tin.
  • Put the grated carrots in a bowl and using a wooden spoon, mix in the sugar until conbined.
  • Mix in the almond powder and the baking powder and mix until combined.
  • Add the eggs and mix in until combined.
  • Pour into well greased cake tin and bake for about 40 - 50 minutes or until the centre is firm to the touch.
  • Cool completel before taking out of the cake tin. Dust with icing sugar and serve.

I live in a beautiful village on the island of Malta ( Europe) with my wonderful daughter, partner and two cats. I love the vineyards infront of my house or walking down to the valley of olive trees. ( I do pick olives every year) Some years ago I stopped working as a chef but still do a lot of home cooking. What I miss are the expensive ingredients I worked with, its rather hard cooking on a tight budget.
