Pumpkin Spice Bars

"I got this recipe a long time ago, and make it every year for bake-sales, Halloween, etc. The spices blend very well, and it goes great with a cheesecake top stirred in or cream cheese icing."

  • Preheat oven to 325°F.
  • Combine all the dry ingredients (flour, spices, baking soda), in one bowl and mix well.
  • Combine eggs and sugar in a mixer with a whisk attachment until they have lightened in color and gained volume.
  • Turn mixer on medium, and slowly add the oil.
  • Change to paddle on the mixer, and alternatively add large glops of the mixed dry ingredients and pumpkin puree until incorporated.
  • Alternative, simpler instructions: Combine dry ingredients, combine wet ingredients, then add wet to dry.
  • Pour into pan and bake for 30 minutes.
  • Cool and frost with cream cheese frosting if desired. Cut into bars.

  1. My family LOVED these!!!! The entire pan was gone by the next afternoon and I've made it almost 5 times since! I use 'Libby's Pumpkin Pie Mix' because I didn't have all the spices and it turned out AWESOME. I don't really consider it a 'BAR' as I made the recipe in a 9x13 pan and it was more like a cake.
