- 2 cups all-purpose flour
- 1 teaspoon ground cinnamon
- 1 teaspoon baking soda
- 1⁄2 teaspoon ground ginger
- 1⁄2 teaspoon ground mace
- 1⁄2 teaspoon ground cloves
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon allspice
- 1⁄4 teaspoon ground nutmeg
- 2 cups granulated sugar
- 3 large eggs, beaten
- 1 cup vegetable oil
- 1 cup canned pumpkin
directions
- Preheat oven to 325°F.
- Combine all the dry ingredients (flour, spices, baking soda), in one bowl and mix well.
- Combine eggs and sugar in a mixer with a whisk attachment until they have lightened in color and gained volume.
- Turn mixer on medium, and slowly add the oil.
- Change to paddle on the mixer, and alternatively add large glops of the mixed dry ingredients and pumpkin puree until incorporated.
- Alternative, simpler instructions: Combine dry ingredients, combine wet ingredients, then add wet to dry.
- Pour into pan and bake for 30 minutes.
- Cool and frost with cream cheese frosting if desired. Cut into bars.

My family LOVED these!!!! The entire pan was gone by the next afternoon and I've made it almost 5 times since! I use 'Libby's Pumpkin Pie Mix' because I didn't have all the spices and it turned out AWESOME. I don't really consider it a 'BAR' as I made the recipe in a 9x13 pan and it was more like a cake.
