Pumpkin Roll

- 3 eggs
- 1 cup sugar
- 2⁄3 cup pumpkin
- 1 teaspoon lemon juice
- 3⁄4 cup flour
- 1 teaspoon baking powder
- 1⁄2 teaspoon salt
- 1 teaspoon nutmeg
- 1 teaspoon ginger
- 1 teaspoon cinnamon
- 1 cup pecans

Filling
- 8 ounces cream cheese (soft)
- 1 cup powdered sugar
- 4 tablespoons butter (softened)
- 1⁄2 teaspoon vanilla
directions
- Pre-heat the Oven to 350'.
- Set aside 1 cup Pecans.
- In a large mixing bowl, beat eggs and add in other ingredients- mix or beat until all ingredients are well blended.
- Grease and lightly flour 12x18 jellyroll pan.
- Pour pumpkin mixture into pan and spread evenly.
- Cook in Pre-heated oven for 12-15 mins or until toothpick comes out clean.
- Let cool 5 minutes Then put onto clean dish towel, loosely roll while warm, lengthwise, let cool.
- While roll is cooling mix filling. When roll is cool, carefully un-roll, spread filling mixture, sprinkle pecans, re-roll, wrap in plastic wrap and place in fridge until ready to serve. Store any left-overs covered in fridge.

Super yummy!! I made this for a potluck & everyone loved it. One guest came late & the last piece was gone...however, a little was left on the serving plate, so the guest ate that & said it was really good. I made this a day in advance & it was delicious.
