    This is my favorite for the holidays! It's like pumpkin pie with rice! I got this recipe from a local newspaper.

    Ingredients:

    Directions:

      Combine pumpkin, sugar, salt and spices; stir in eggs.
    2. 2
      Add milk and mix well.
    3. 3
      Combine rice and raisins to the mixture and stir together. Pour the mixture into a 1 1/2 quart casserole dish and place in a pan of water.

      Bake at 350 degrees for 50 to 60 minutes, or until set in the middle.

      Cool completely and top with whipped topping.

      Very good! Halved the recipe, used fresh, frozen pumpkin and omitted the raisins. Mild spices, a lovely variation of plain rice pudding. Thanks for sharing the recipe!
