  • Combine pumpkin, sugar, salt and spices; stir in eggs.
  • Add milk and mix well.
  • Combine rice and raisins to the mixture and stir together. Pour the mixture into a 1 1/2 quart casserole dish and place in a pan of water.
  • Bake at 350 degrees for 50 to 60 minutes, or until set in the middle.
  • Cool completely and top with whipped topping.

  1. Very good! Halved the recipe, used fresh, frozen pumpkin and omitted the raisins. Mild spices, a lovely variation of plain rice pudding. Thanks for sharing the recipe!
