Muffin
- 2 eggs, beaten
- 1 1⁄2 cups evaporated milk
- 15 ounces canned pumpkin
- 1⁄2 cup oil
- 1 cup applesauce
- 3 cups flour
- 3⁄4 cup wheat germ
- 1 1⁄2 cups oats
- 1 cup sugar
- 3 tablespoons brown sugar
- 2 tablespoons baking powder
- 2 teaspoons cinnamon
- 1⁄2 teaspoon nutmeg
- 1⁄2 teaspoon ginger
- 1⁄4 teaspoon clove
- 1 teaspoon salt
- 3 tablespoons maple syrup

Topping
- 1⁄2 cup brown sugar, packed
- 1 teaspoon cinnamon
- 2 tablespoons butter
- 1⁄2 cup walnuts, chopped
directions
- 1. Mix wet ingredients well, then add dry ingredients and mix until moist.
- 2. Fill greased muffin pans 3/4 full and pat on the topping.
- 3. Bake at 400 for 18 - 22 minutes.
- 4. Serve hot out of the oven with butter or cream cheese.
- 5. Enjoy!
