Pumpkin Bread

"This was my Aunt Janet's pumpkin bread. I like it because it is simple to make, doesn't require a bunch of ingredients that I don't always keep on hand and is sweet enough it doesn't need an icing or glaze."

  • Mix all ingredients together. Pour into buttered loaf pans. Bake at 350 for 40-60 minutes.
  • Note: 3 Cups of pumpkin = 1 large can of pumpkin.
  • I like to use 4 C unbleached all purpose flour and 1 C whole wheat flour. It just makes it a little bit healthier and doesn't change the texture of the bread. I always use a small portion of whole wheat flour in all of my baking.

  1. we enjoyed this bread we made it more weight watchers friendly by using 4 cups of white flour and 1cup whole wheat flour we subbed applesauce for the oil and splenda for the sugar since we used splenda it baked much more quickly about 35-40 minutes i am interested what the calorie count is now
