  • Preheat oven to 350 degrees. Mix the dry ingredients together in a large bowl, then add the eggs, oil, and pumpkin. Use a mixer on a medium setting until the batter is well-combined. Pour into two greased loaf pans (we use sillicone with smart balance and a little flour, and it works wonders) and bake for 45 minutes or until done.

  1. I made this yesterday, and it came out absolutely wonderful! So yummy! My fiance doesn't even like pumpkin, and even he said it was good. I had to bake it for about an hour, because after 45 minutes it was still raw in the middle. But it came out great! I'm going to bring a loaf over to my mother's on Friday to see what she thinks. By the way, it is very good with cream cheese frosting too. Overall, I will definetly make this again. Thanks for the great recipe!
