Pressure Cooker Chicken Stew

  • Dice chicken 1/2” cubes.
  • put into bag with flour & salt shake.
  • pressure cooker on medium high .
  • add oil.
  • Add onions.
  • add garlic & powder spices.
  • add chicken & flour.
  • saute chicken till brown.
  • add vinegars.
  • add molasses.
  • add vegetables.
  • Let vinegar cook off a bit.
  • add chicken stock.
  • add bay leaves.
  • put lid on pressure cooker.
  • Raise to High.
  • when steam begins, reduce heat to medium.
  • cook 45 minutes.
  • caution: if steam stops, TAKE OFF HEAT, let it cool naturally.

Live in East Texas. Love to BBQ & host friends. Traveled the world a lot when I worked, love ethnic foods.  Diabetic, no carb diet, keeping my A1C normal.  But, you won’t find many baked goods since diagnosis.
