ingredients
- 3 lbs chicken
- 1⁄2 lb carrot
- 1⁄2 lb green beans
- 1⁄2 sweet onion
- 3 tablespoons peanut oil
- 1 tablespoon minced garlic
- 1 tablespoon chili powder
- 1 teaspoon cayenne powder
- 1 teaspoon cumin powder
- 1⁄2 teaspoon turmeric
- 1⁄2 teaspoon coriander
- 3 bay leaves
- 2 tablespoons molasses
- 2 teaspoons balsamic vinegar
- 1 tablespoon apple cider vinegar
- 1⁄2 cup flour
- 1 teaspoon salt
- 1 tablespoon black pepper
- 1 quart chicken stock
directions
- Dice chicken 1/2” cubes.
- put into bag with flour & salt shake.
- pressure cooker on medium high .
- add oil.
- Add onions.
- add garlic & powder spices.
- add chicken & flour.
- saute chicken till brown.
- add vinegars.
- add molasses.
- add vegetables.
- Let vinegar cook off a bit.
- add chicken stock.
- add bay leaves.
- put lid on pressure cooker.
- Raise to High.
- when steam begins, reduce heat to medium.
- cook 45 minutes.
- caution: if steam stops, TAKE OFF HEAT, let it cool naturally.
