This is one of the first cookies I learned to make. The recipe can be halved and baked in an 8 x 8-inch pan, or a 9-inch pie plate. In my younger days I didn't have as complete kitchen as I do now.

  1. Melt shortning in saucepan over low heat.
  2. Remove from heat and mix in sugar egg and vanilla.
  3. Stir in remaining ingredients.
  4. Spread in greased 9 x 13-inch pan.
  5. Bake 25 minutes at 350°F.
  6. While warm, cut into squares.

Great recipe, even though I forgot to put the chocolate chips on before baking. It was really quick and easy. I bake a lot of sweets for fundraisers and this one is going to go into the make often box I am sure.

Instead of the chocolate chips, I sprinkled 1/2 cup of butter toffee chips over the top of the recipe and gently pressed them in. I don't think I needed the full 25 minutes for cooking, as the outside of the squares turned a bit crunchy, but this chewy square has been declared my husband's new favorite.
