This is an easy dressing that has much less fat than mayo or commercial salad dressing. Sometimes I add half a cup of plain yogurt to the cooled dressing for a bit of extra creaminess and bite.

  1. Combine flour, sugar, salt, mustard and cayenne pepper in top of double boiler.
  2. Stir in eggs, butter, milk and vinegar.
  3. Cook over boiling water, stirring constantly until mixture begins to thicken.
  4. Remove form heat and cool Pour into a jar w/ cover Refrigerate.
