  1. Add the butter, salt, sugar, pepper, flour, and parsley to the mashed potatoes.
  2. Beat the egg yolks and add them to the mixture. Mixing well.
  3. Fold in the egg whites.
  4. Drop by tablespoons into a deep fat fryer at 375* and cook for 5 - 8 minutes or until a delicate brown.
  5. Drain on paper towels or brown grocery bags.
