Potato Chip Chicken (Gluten Free)

"I love this chicken, it is so moist inside and the chips make the outside crunchy. My favourite way to make this chicken is with ruffled chips, but you can make it with your favourite flavour!"

  • In large plastic bag, combine crushed potato chips, parsley, salt, paprika, and onion powder.
  • Brush chicken with mayonnaise; add chicken to crumb mixture and coat, shaking off extra.
  • Place in greased 9x12 dish. Bake at 350 degrees for about 20 to 30 minutes.

  1. Our whole family liked this one. It's super easy and very yummy! I didn't actually measure the mayo and probably ended up using more than called for, but it turned out fine. The chicken wasn't quite all the way thawed so I had to bump up the time to about 45 minutes to get it cooked through. This was a great way to have crusted chicken. Our family is GF and corn free so it's somewhat of a challenge to find crispy coatings. This was a nice one.
     
  2. I love this recipe! And, it turns out that my husband's mother use to make this all the time when he was little, so it brought back warm memories for him! I also tried this using pork chops instead of chicken. Had to cook it for about an hour. Delicious!

  4. This was super easy to make and a great way to use up leftover chips! I used some "posh" chips which were extra crunchy, with all the seasoning these turned out really well. The chicken was succulent and the coating stayed crispy. A lovely, quick meal idea for the week!
     
  5. I didn't find the balance and mix of flavors in this recipe to be particularly good. The recipe works well, but the parsley and paprika just are not good together like this to me. Also, the chips have plenty of salt on their own as other reviewers have noted. My boyfriend likes this recipe a lot more than I do... I'll try to alter it to both of our tastes.   1. Absolutely delish! We used 6 boneless/skinless thighs instead of breasts - just happened to be what was in the fridge. The recipe doesn't specify if fresh or dry parsley is suggested - I just picked up a bunch of fresh and it smelled fabulous so it had to be used. This is definitely a recipe we'll be repeating and passing on to friends!

I have just started to get the hang of this tricky gluten free diet. It really is ALOT harder than it seems.But however, I am determined to make the best of it. I very much enjoy cooking and baking, so I have been buying every gluten free cookbook I can get my hands on and every moment I get, I try to test out some of these new recipes. However frustrating and difficult it's been trying to experiment with all these new flours and ingredients, it has been alot of fun, and everytime I find a good reipce, it makes it all worth it. I want to find as many wonderful and delicious gluten free recipes as I can, and post them all on this site. I know how hard it is when you are first diagnosed, and I want to help others who have recently been diagnosed or just others that have celiac disease that need some great gluten free recipes. Celiac disease is something that we have to live with everyday, so it's important that we make the best of it.For sure at least one good thing has come from having Celiac Disease, I have become a better cook and have truly cherished the moments that I spend in the kitchen. All the recipes that I post on this site I have made and I have found to be very good! They are all gluten free! Some of the recipes use special ingredients that you can buy at specialty health stores, and some of them are recipes that you can make with ingredients bought right at your local grocery store. My recipes that use special flours etc. are named starting with gluten free [ex. Gluten Free French Bread], and the recipes that use everyday ingredients end with the word gluten free in brackets [ex.
