- 4 ounces chopped bacon
- 2 tablespoons butter
- 2 sliced leeks
- 2 teaspoons chopped fresh sage
- 2 teaspoons chopped fresh thyme
- 4 cups chicken broth
- 1 1⁄2 cups cream
- 1 bay leaf
- 3 chopped potatoes
- 8 ounces sharp cheddar cheese
- fresh chives, to taste
directions
- Saute bacon and add 2 tablespoons butter.
- Add leeks and fresh sage and thyme.
- Add chicken broth and cream and bay leaf and potatoes.
- Simmer until tender, then stir in sharp cheddar and chop with chives.
