  1. Place peach in blender, cover and process until smooth.
  2. Add sugar, apple juice, vinegar, onion, mustard and salt. Cover and process for 10 to 15 seconds, slowly add oil, process one minute.
  3. Stir in poppy seeds.
  4. Refrigerate.
