- 1 tablespoon oil
- 1 onion, thinly sliced
- 2 garlic cloves, crushed
- 8 -10 portabella mushrooms, thinly sliced
- 1 carrot, thinly sliced
- 1 -2 zucchini, thinly sliced
- 1 small green bell pepper, thinly sliced
- 1 small red bell pepper, thinly sliced
- 1 small orange bell pepper, thinly sliced
- 1 (300 g) container salsa
- rice, to serve
directions
- Heat a skillet over medium-high heat and add the oil.
- Add onion and garlic, and cook, stirring, until tender.
- Add the mushrooms and stir for 3-5 minutes.
- Add the carrot, zucchini and bell peppers, and stir until tender, and carrot isn't 'hard'.
- Remove from heat and add the salsa, stirring to mix it inches.
- Replace on heat and simmer for 5-10 minutes.
- Remove from heat and serve with rice.
