- 1 lb dried pinto bean
- water
- 2 garlic cloves, minced
- 2 yellow onions, minced
- 1⁄3 cup jalapeno, minced
- 1 tablespoon sugar
- 1 teaspoon cumin, ground
- 1⁄4 teaspoon black pepper
- 1 teaspoon salt
- 3⁄4 cup bacon, chopped
directions
- Wash beans; put into a large bowl or cooking pot. Pour water over beans to cover them; let stand overnight, drain and discard water.
- Put beans, garlic, onions, peppers, sugar, cumin and peppers in to a large stock pot. Pour water to cover mixture. Bring to a boil and simmer for 45 minutes.
- Add salt and bacon; continue to simmer until beans are tender, about 45 minutes.

I made these as directed with the exception of the bacon. I chose not to use the bacon to keep these vegetarian. I can easily imagine the bacon adding wonderful flavor. I would have liked these to be spicier, but that was probably due to my choice in peppers. We thought they could have used more salt. Thanks for posting. Made for Fall PAC 2011.
