  1. Love "different" potato salads like this. Even my husband (not a beet fan) really liked it. I used sour cream instead of mayo and thought that worked really well with the flavors and textures. Hard boiled egg is a nice addition. I used fresh beets.

  2. This was an amazing variation on potato salad and we all adored it. As another reviewer suggested I added hard boiled eggs and snipped in a few coriander leaves from the garden and it was fabulous. I highly recommend everyone tries it.

  3. Very nice potato salad, and I even got my non-beet-eating family to allow this was pretty good and they'd eat it again. I think it might be nice to put in some chopped up hard-boiled egg, too.

  4. Mmmm, this is super tasty!!! The potatoes go so well with the earthy beets and sweet carrots. The onion adds a lovely bite to it and the salt and pepper make the taste experience perfect! I was out of mayo so I subbed it with some creamy yogurt, which was really nice. I will surely make this again as it tastes great, is easy to prepare and looks very special, too! THANKS SO MUCH for sharing your recipe with us, WonderMima! Made and reviewed for Think Pink Tag Game October 09.

  5. My MIL makes this pink potato salad, but without the carrots or onions. She also adds green olives (pimiento-stuffed). She does make a version with carrots, but just the potatoes, mayo, salt, pepper and a can of mixed peas and carrots. This version, of course, does not have the beets in it.
