- 3 tablespoons butter
- 1⁄4 cup all-purpose flour
- 1 tablespoon onion, finely grated
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon dry mustard
- 1⁄4 teaspoon Worcestershire sauce
- 1 pinch cayenne
- 3⁄4 cup milk
- 3⁄4 cup tomato juice
- 1 1⁄2 cups cheddar cheese, shredded
directions
- Melt butter in top of double boiler.
- Blend in flour, onion, salt, dry mustard, Worcestershire sauce and cayenne.
- Gradually stir in milk.
- Cook over direct heat until smoothly thickened, stirring constantly.
- Remove from heat and gradually stir in tomato juice.
- Place over hot, not boiling, water and add cheese.
- Stir constantly until cheese is melted.
- Serve on toast, with a tossed salad.
