  1. Mix flour, butter and icing sugar and press into a 9 inch pie plate. Bake 20 minutes at 350°F.
  2. Cook crushed pineapple, corn starch, salt and sugar until thick. Add butter and lemon juice. When cool pour into the cooked pie crust.

MMMmmm! Do love my pineapple, and this is definitely a star worthy pie. Unfortunately, my shortbread crust kept wanting to crumble! But I forged ahead, and was rewarded with a lovely dessert! Thnx for sharing your recipe, Dot. Made for My-3-Chefs 2009.
