  1. save the juice from canned pineapple dump in bowl with chunks
  2. mix in sugar
  3. peel and dice cucumber
  4. add to pineapple.
  5. roughly grate carrot in bigger chunks.
  6. add to pineapple.

So healthy, simple, pretty and yes tasty! This salad made a nice side for dinner but it would also be a good picnic or potluck salad. I made as written and will make again. Thanks for the post.
