  • mix together butter and sugar.
  • add eggs and pineapple, mix well.
  • add in flours, soda, and salt, blend together.
  • add vanilla.
  • pour into greased & floured loaf pan.
  • bake at 350 degrees for 1 hour.

  1. Thank you for this recipe-- it is really moist, tender, and tasty! I made this bread as described. Because I couldn't find crushed pineapple, I purchased a 20 oz. can of pineapple "tidbits" and drained the pineapple (saving the juice in another bowl). I took my mashed potato masher and "crushed" my own pineapple for the bread. I used (some of) the remaining pineapple juice to thin out the batter, and then to lightly brush onto the surface of the bread after it was done baking (and right out of the oven). The hot surface of the bread soaked up the excess pineapple juice, which imparts a stronger pineapple flavor.
     
  2. This bread was so easy to make, I used only regular white flour in it. Almost like a cake with no frosting. Definitely a winner and one I will be making again!!
