Excellent! This is super easy to make. Go easy on the garlic or it will overwhelm the dish. Cheesy bread and a mixed green salad go great with this. Good hot or cold.
- 2 lbs tiny new potatoes
- 1⁄2 cup fresh basil
- 2 tablespoons pine nuts
- 1⁄2 cup olive oil
- 3⁄4 cup parmesan cheese
- salt and pepper
- Cook the potatoes in a saucepan of boiling salted water for 15 minutes or until tender. Drain well and transfer to a serving dish.
- Meanwhile, put the basil, pine nuts, garlic and a little salt and pepper in a food processor (the blender works too). Process for 30 seconds, adding the oil slowly, until smooth.
- Remove the mixture from the food processor and place in a mixing bowl. Stir in the cheese. Spoon the pesto over the potatoes and mix well.
