  • 2 slices white bread
  • 1 ounce swiss cheese, made with 2% milk
  • 14 cup low-fat cheddar cheese, shredded
  • 1 teaspoon jalapeno, roasted and minced
  • 2 teaspoons butter, softened
  • 12 teaspoon reduced-sodium taco seasoning mix

  • Combine taco seasoning and butter thoroughly.
  • Thinly coat 1 side of each bread slice with 1/2 teaspoon butter mixture.
  • Heat skillet to medium.
  • When hot, lay down 1 slice of bread, buttered side down.
  • Then, layer slice of Swiss cheese, minced roasted jalapenos and cheddar.
  • Top sandwich with the remaining bread slice, buttered side UP.
  • Flip when sandwich has reached desired brownness. Raise heat to medium or medium-high and continue cooking until other side is to your preferred brownness.
