Perfect Potato Salad

Ingredients:

Servings: 5

• 5 cups chopped potatoes

Marinade

• ½ cup oil or ½ cup water
• 3 tablespoons apple cider vinegar
• 1 -2 teaspoon dried parsley , crushed
• ¼ teaspoon basil
• ¼ teaspoon sea salt
• 3 dashes cayenne pepper
• 3 dashes sea kelp (optional)

Add after marinated

• 1⁄3;-½ cup chopped fresh parsley
• ½ cup eggless mayonnaise (Veganaise is good)
• ½ teaspoon paprika
• ¼-½ teaspoon horseradish, to taste finely chopped or 3 -6 green onions , finely chopped
• sea salt
• 3 dashes cayenne

Directions:

1. Chop and steam potatoes until very tender.
2. Marinate potatoes in the marinade for 2-4 hours or overnight, stirring every half hour, or 3-4 times.
3. Drain off excess liquid (if any).
4. Mix potatoes with all other ingredients.
5. Chill for 1 hour or more before serving.
