This recipe was given to me by my mother-in-law who as a wedding gift put together a recipe book filled with favorite family meals. She still keeps the ingredients a secret since some of her boys are super picky eaters...now I'm making it for my family!

I changed the cooking method to crockpot. The meat came out very tender, had a nice color, and worked well sliced for open faced roast beef sandwiches. I did think it was salty so elected not to make gravy from the broth. Thank you for sharing your recipe!
- 2 -3 lbs roast
- 1 tablespoon oil
- 1⁄4 cup soy sauce
- 1 cup brewed coffee
- 2 bay leaves
- 1 garlic clove, minced
- 2 medium onions, sliced

- Sear roast in oil on all sides in a heavy dutch oven.
- Combine soy sauce and coffee and pour over meat after browning.
- Put half of sliced onions on the meat and the other half in the sauce around the roast; place bay leaves in sauce.
- Cover and bake 2 1/2 to 3 hours at 325 degrees.
