  1. Peanut Butter Pudding: Mix sugar, cornstarch and salt. Gradually add milk and cook over medium heat until thick and bubbling.
  2. Stir constantly.
  3. Remove from heat, add 1 cup peanut butter and 2 teaspoons vanilla.
  4. Cool; times do not include refrigeration time.

I scaled this down to use 1/2 cup milk, 1 tbsp sugar, 1 tbsp cornstarch, 1/2 tsp vanilla, and 3 tbsp. peanut butter. I mixed everything together and made it in the microwave. I added a dash of cooking spray to help emulsify it. The only thing I would change is to either add 3/4 tsp. molasses per cup of sugar
