An easy side dish with lots of fiber!
- 2 cups chicken broth or 2 cups vegetable broth
- 3 cloves garlic, minced
- 1 tablespoon chopped fresh basil
- 1⁄2 medium onion, chopped
- 1 cup dried split peas
- Bring broth to boil in a medium saucepan.
- Add the garlic, basil, onion and split peas and return to boil.
- Reduce heat, cover and simmer until liquid is absorbed and peas are tender, about 30 minutes.
