  • Heat milk, lemon zest and cinnamon in a larger saucepan until very hot, but not boiling.
  • Meanwhile, mix sugar, eggs, flour and vanilla in a mixing bowl until well combined.
  • When the milk is quite hot, temper the flour mixture with a bit of milk, and then add it all back into the saucepan.
  • Whisk constantly over medium heat until thickened.
