Parma Figs

ingredients
- 8 slices parma ham
- 16 -20 fresh figs
- 4 tablespoons ricotta cheese
- 1 tablespoon brown sugar
- 4 tablespoons honey (preferably wild)
directions
- Open the figs by scoring them on the top and gently squeeze from the bottom so they "open up".
- Wrap the ham around the open figs, and spoon some ricotta in to the openings.
- Sprinkle the sugar on the ricotta, and place under hot grill until the figs are warm and cheese starts to brown.
- Drizzle with honey and serve immediately.

These were outstanding! The star of an extended family luncheon with a "high tea" theme. We used procuitto for the parma and I used homemade greek yogurt for the stuffing. I didn't think they looked much like flowers but still cute and the flavor was to die for! (I burned the second batch for lack of watchfulness though... it was soo disappointing!)

OK, I'm a dummy, but we really had trouble assembling these. How do you get the ham to stay around the figs when they are opened and the ricotta to stay in the middle? They turned out so messy I didn't even take a photo. The flavor is great: salty ham, sweet honey and crunchy fig seeds... From the description, I know there must be a better technique than we used, and they would turn out super-fancy. Will make again.
