Orange Streusel-Topped Muffins

- 2 cups flour
- 2 teaspoons baking powder
- 1⁄4 teaspoon baking soda
- 1 teaspoon salt
- 1⁄2 cup sugar
- 1 tablespoon orange zest, grated
- 2⁄3 cup orange juice
- 1⁄2 cup butter, melted
- 2 eggs
- 1⁄2 cup walnuts, chopped
- 1 tablespoon butter, melted
- 1⁄4 cup brown sugar, packed
- 1⁄2 teaspoon cinnamon
directions
- Combine flour, baking powder, baking soda, salt, sugar and grated orange peel. Stir in orange juice, melted butter, eggs and chopped nuts.
- Pour into 12 muffin cups.
- Blend 1 tablespoon melted butter, brown sugar, cinnamon and sprinkle on top of each muffin.
- Bake in a preheated 350F oven for 20 - 25 minutes.

These muffins are heavenly! Light and fluffly and you can taste the orange. I give it four stars instead of five though, because the butter for the streusel topping should not be melted. I did so anyway as the recipe instructed. So what did I get? Not a crumbly streusel to sprinkle on top, but liquid. So as soon as I put the muffins in to bake, there was a burning smell. The so-called streusel ran off onto the pan and some dripped onto the bottom of the oven. Next time, I shall not melt the butter for the streusel topping.

I am a native Californian, born in the Los
Angeles area, college in far northern California and now living in southern part of the San Francisco Bay Area.
I love kids and animals. I am an active volunteer at my two teenage daughters' high school as well as a Girl Scout leader. We have two guinea pigs, one Dalmatian, one cockatiel, and one quarter-horse to keep us busy. I had a career as a marketing writer before I became a full-time mom and volunteer, but I still write all the time as well as participate in a monthly book club.
I stay active and have Jazzercized for over 25 years on a regular basis. I also am trying to do some yoga now and ride horses for fun.
I have loved getting involved in the RecipeZaar games and learning how to post the photos. I am currently playing on the Zaar World Tour and it is lots of fun!
Have been a sports fan since childhood and definitely have enjoyed getting to know about hockey since we have a very successful NHL franchise in our area: Go Sharks!
