  • Heat butter in a small saucepan over medium heat.
  • Saute minced onion in butter until tender and translucent.
  • Stir in orange marmalade and beets.
  • Cover and warm over low heat until heated through.
  • Add salt and pepper.

  1. My only experience with beets in the past has been pickled and from a jar. I used a one large, fresh beet for this. I sliced it thin, and microwaved it until it was soft (because I was short on time). The more I ate this, the more I liked it. The sweet orangy flavor really goes nicely with the beets. I'd make it again, and maybe up the amount of marmalade a little. I'm accustomed to beets being sweet, so I like it that way! :)
     
  2. I made a slight oops when putting this together on Christmas. I had orange marmalade and apricot preserves on the shelf, both just purchased. I grabbed the jar and added a spoonful before I realized that it was the apricot jam. That actually wasn't bad at all but I'm sure that the orange would be better. What the guys weren't so much in love with was the onion. They tasted fine to me so I split the votes for 4 stars. Very easy and quick to make. To be honest I think that that recipe would be better with fresh cooked beets. I used a can of crinkle cut beets (what I had) and I don't think that they flattered the recipe. In no way is that the fault of the recipe. This is a lovely and tasty way to do beets.
