  • Wash, peel and coarsely grate beets.
  • In a covered frying pan, melt butter then add the beets, stirring to coat with the butter.
  • Squeeze some lemon juice to taste over the beets.
  • Cover and cook over low heat for about 10 minutes or until beets are just tender.
  • Check often to make sure beets are not burning, and add a few drops of water or broth to the pan to prevent sticking.
  • Season with salt, pepper and herbs.

  1. This recipe really brings out the awesome flavor of the fresh beets. It was absolutely delicious! I didn't expect a recipe with so few ingredients would result in such an amazing side dish.
     
  2. This is very similar to another recipe I use. I saute the beets in a little olive oil stirring while cooking but only for a little over 4 minutes. I've used lime juice and then a little butter for flavor added at the end. It just makes for a bit fewer calories, and less saturated fat. Either way this recipe is a winner and definitely quick and easy. I eat a lot more beets than I used to when they were boiled and then slipped. I've also used a little water and butter to reduce fat ( in a non-stick Pan of course) when cooking the grated beets.

  4. Very simple, tasty way to eat beets. I've only boiled them in the past so this was a nice change and the lemon gave a nice flavor to the beets. My hands are a little pink though :)
     
  5. This was terrific. Nice super short list of ingredients so that even on a tight budget a person can eat healthy. The taste was very nice. Earthy flavor and color. Used all organic ingredients and threw in some shredded carrots too for my 4 yr old daughter. Simple to make. Made this as a side dish to go with some cod sauteed in olive oil and lemon. I would make this again but as a main dish for myself and just have a small salad of escarole on the side with an olive oil dressing. Thanks so much for sharing this.

<p>Life often interupts our comfortable routines in very unexpected ways and in the past three years I've certainly faced some challenges.&nbsp; As a health nut who ate mostly vegetarian I was beyond shocked to discover that I was diabetic.&nbsp;<img title=Yell src=../tiny_mce/plugins/emotions/img/smiley-yell.gif border=0 alt=Yell /> I shouted and rebelled and cried.&nbsp; But the good news is that I can control my glucose levels simply by eating very low carb.&nbsp; What a complete turn around it was to&nbsp;pass up&nbsp;all my high carb vegetarian foods like grains, and veggies and embrace meat!&nbsp;<img title=Surprised src=../tiny_mce/plugins/emotions/img/smiley-surprised.gif border=0 alt=Surprised /> I've adjusted to this limited diet and thanks to Zaar can eat a nice variety of healthful meals.</p> <p>&nbsp;The next challenge was a freakish fall I took while in New York with my daughter that left me paralyzed and in much pain.
