One Dish Meal: Tex Mex Pasta

ingredients
- 200 g fettuccine
- 1 tablespoon pure wesson canola oil
- 2 jalapeno peppers, washed and sliced
- 1⁄2 medium zucchini, washed and cut into juliennes
- 1 small red bell pepper, washed, halved, de-seeded and cut into juliennes
- 1 small yellow bell pepper, washed, halved, de-seeded and cut into juliennes
- 1 small green bell pepper
- 2 tablespoons chili-flavored olive oil

- 8 -10 tortilla chips
- 1 cup grated mozzarella cheese

For salsa
- 4 garlic cloves, peeled, washed and crushed
- 1 small onion, peeled, washed and chopped
- 2 fresh red chilies, stems removed, washed and chopped
- 1⁄2 small green bell pepper, washed, de-seeded and chopped
- fresh coriander leaves, washed and chopped finely
- 1⁄2 teaspoon cumin seed, dry roasted and ground to a powder
- 1 1⁄2 tablespoons oil
- 1 teaspoon red chili powder
- 1 cup tomato puree
- salt
- 1 tablespoon fresh lemon juice
directions
- Boil 5 cups of water in a large pot.
- Add pasta to it.
- Cook pasta for 5-7 minutes or till it is a la dente{or firm to touch and just about ready to eat}.
- Stir it gently.
- Drain the hot water out and refresh the pasta with cold water.
- Apply oil and keep aside.
- Heat oil in a non-stick pan.
- Add garlic and onion.
- Saute until the raw smell of the garlic is gone and the onion and garlic are golden brown in colour.
- Add red chillies, bell peppers, cumin and red chilli powders and the tomato puree.
- Stir well.
- Mix in salt to taste.
- Cook for 3 minutes and then remove from flame.
- Allow to cool completely.
- Add lemon juice and corriander leaves.
- Heat chilli-flavoured olive oil in another pan.
- Add zucchini and red, yellow and green bell peppers'.
- Add salt to taste.
- Stir-fry for 4 minutes.
- Add the boiled pasta, saute it and keep aside.
- Pre-heat your oven now to 180°C.
- Take a large baking dish.
- Spread salsa on it at the base.
- Crumble the tortilla chips and sprinkle them over the salsa.
- Spread pasta over this.
- Cover with the mozarella cheese.
- Place jalapeno peppers over the cheese layer.
- Bake in the pre-heated oven at 180C for 7 minutes or till the cheese melts completely.
- Serve hot.
- Enjoy!
