Oma Betty's Good Relish

"Given to me by a friend, this is her Oma's relish recipe. Best relish I have ever had and easy to make. I process the vegetables in the food processor."

  • Combine the vegetables in a large plastic bowl and mix with the tablespoon salt. Let stand 4 - 5 hrs, drain well.
  • Bring the remaining ingredients to boil.
  • Add vegetables and boil hard for 10 minutes.
  • Pour into hot, sterilized jars, seal.
  • Process for 10 min in a hot water bath.

I farm with my family on the Canadian Prairies, specifically North Eastern Alberta. I really enjoy cooking, especially the produce I grow myself. We have our own beef, chicken and vegetables. My family humours me by letting me try out new recipes on them but they certainly let me know when it's a flop! My children are starting to learn how to cook (though sometime begrudgingly). ?I also work out of home several days a week as an administrative assistant and I am an active member of my Parish.
