- 1 cup butter or 1 cup margarine
- 1 3⁄4 cups all-purpose flour
- 1 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon cinnamon
- 1 3⁄4 cups packed brown sugar
- 1⁄2 cup granulated sugar
- 2 eggs or 1/2 cup liquid egg substitute
- 2 teaspoons vanilla
- 2 cups of uncooked rough oatmeal
- 1 cup raisins

- In a large mixing bowl, beat the butter/margarine on medium to high speed for 30 seconds. In a smaller bowl, stir together 1 cup of lour, baking soda, salt and cinnamon. Add mixture ot the bugttery mix. Add brown sugar, white sugar, eggs, and vanilla to mix. Blend 1-2 minutes, or until all ingredients are thoroughly mixed. Stir in the oats and the remaining flour. Fold in the raisins. Drop by rounded teaspoons 2 inches apart onto ungreased cookie sheet. Bake at 350F for 10-12 minutes or until the edges are lighly browned. Cool on rack. Makes about 48 cookies.
