- 1⁄2 cup butter or 1/2 cup margarine, softened
- 18 ounces peanut butter
- 3⁄4 cup Splenda Sugar Blend for Baking
- 1⁄4 cup Splenda brown sugar blend
- 4 large eggs
- 1 teaspoon vanilla
- 6 cups quick-cooking oatmeal
- 2 1⁄2 teaspoons baking soda
- 1 1⁄2 cups chocolate chips
directions
- 1. Cream butter and peanut butter.
- 2. Slowly add sugar substitutes.
- 3. Mix in eggs and vanilla.
- 4. In a separate bowl, combine oats and baking soda. Stir into peanut butter mixture.
- 5. Add chocolate chips.
- 6. Drop by tablespoon on baking sheet.
- 7. Bake for 9-10 min at 350.
- 8. Cook on baking sheet for 5 minutes. Remove to cooling rack.

My first few cookies making this recipe were very dry. I added about a half cup of water and mixed again. This made for a better cookie that rose nicely. Dough was very stiff even after adding water, cookie shape was pretty much the shape they were placed on the baking tray. Flavor is good, will make again.
